The organisations behind The Pure Collective do things “For Love. Not Money.” That’s why they co-founded Sydney’s first profit-for-purpose restaurant by the same name  - Folonomo.

And this year, some of the Australia’s most innovative chefs and wine makers will be supporting Pure’s amazing philosophy as they use the Folonomo restaurant to host their own intimate popup over 4 consecutive Thursdays during June/July 2018, with all proceeds going to charity.

Closing the series is Oz Harvest’s Executive Chef Travis Harvey who is excited about using the Folonomo platform to share his ideas on cooking sustainably, environmentally and locally (sometimes he goes fruit picking and foraging himself!) with a new community.

“I'm passionate about making my contribution to reducing food waste, and doing my bit to nourish our country,” says Travis.

Drawing on his passion for transforming food scraps into culinary masterpieces, Travis’ menu will feature quirky, delicious dishes such as: Oversupply toastie of shrooms, fermented fennel, cheese sauce, dulse flake; Skin on squash in a sauce of its own seeds; Chook stock wings, garden seasoning, pickled beetroot stems and Stale brioche doughnut, cheese from whey, spotted banana curd, chocolate lace

Wine pairing, curated by Gabriella Fois from The Wine About, will be provided by Thick as Thieves’ Syd Bradford.

After working for some of Yarra Valley's top producers for over a decade, Syd started his own winery making small batch wines with minimal handling and fresh character, texture and balance.

100% of the profits from the evening will be donated to both Travis and Syd's charities of choice – OzHarvest and WaterAid, respectively.

“I am blessed to have an opportunity to feed those in need, and give nourishment as a part of my day to day”, says Travis. “And given that hundreds of thousands of children in Australia go to school without breakfast or bed without dinner while one in five of an average Australian's grocery bags go to waste is unconscionable to me. I'm passionate about making my contribution to reducing food waste, and doing my bit to nourish our country.”
